Picnic recipe: yummy Blueberry Muffins


Summer, sun, sunshine – the summer is ideal for a picnic. And the saying is: Enjoyment to take away! Whether in the park or meeting friends – you can’t go wrong with a couple of juicy blueberry muffins up your sleeve.

But take note, blueberries can give you the shock of your life: They are a very unforgiving berry and will quickly repay being handled incorrectly with a bitter taste. So, no need to worry unnecessarily at the picnic, enjoyment is still the order of the day. With, for example, our yummy blueberry muffins. They’re not just super yummy, but they’re also super quick to conjure up. Why not try for yourself:

200g blueberries
300g flour
3 tsp baking powder
1/2 tsp cinnamon
180g sugar
2 tsp vanilla sugar (bourbon vanilla sugar)
1 pinch of salt
350ml milk
2 eggs
150g butter, melted and chilled
Fat for the mould
Paper cases or muffin baking tray

Preparation time: roughly 10 mins
1. Preheat the oven to 200°C. Grease a muffin tray or line with paper cases.
2. Sieve flour, baking powder and cinnamon into a bowl. Mix in the salt, sugar and bourbon vanilla sugar and make a well in the middle.
3. Mix the milk, eggs and butter together well in a second bowl and pour into the well. Stir carefully, until all the ingredients have sufficiently mixed together. The dough should still be lumpy.
4. Now carefully fold in the blueberries and pour the mixture into the prepared muffin moulds. Bake for 20 – 25 minutes. Remove the muffins and leave them to cool on a cooling rack. Serve the muffins dusted with icing sugar.
